Ingredients
For the Chicken:

1 4-pound smoked chicken

3 tbsps Olive oil
-
1/2 tsp Steak or grilling seasoning
-
1 tsp Chicken seasoning
-
2 tbsp Green seasoning (Featured: KF Fresh Green Seasoning)

Additional item shown: KF Crushed Garlic
For the Sorrel Glaze:
-
1/2 cup Dried sorrel (Featured: KF Dried Sorrel/Hibiscus)
-
1 cup Water
-
1/4 cup Honey
-
2 tablespoons Brown sugar
-
1 tsp Crushed garlic
-
4 whole Cloves
-
1/2 tsp Dried thyme
-
Pinch of salt
Directions
1. Make the Glaze
-
Boil water, add sorrel, and boil for 5 mins.
-
Turn off heat, cover, and steep for 10 mins.
-
Strain, add liquid to pot on medium-low heat.
-
Add honey, sugar, garlic, cloves, thyme, and salt.
-
Simmer until reduced by half. Set aside.
2. Prep the Chicken
-
Gently split backbone and open the chicken.
-
Pat dry with a paper towel.

Mix olive oil and seasonings.
-
Brush inside then outside of chicken.
3. Roast & Glaze
-
Roast for 15 mins at 350°F.

Brush with glaze, then roast for 10 mins.
-
Brush again, then roast for another 10 mins.
-
Brush with a final glaze coat, then let rest for 15 mins before serving.
